MUDHI GHANTA(in Odia)/ Fish head dal curry-an authentic Odia recipe.
This typical curry is very popular in my state Odisha.Mostly this traditional dish is prepared in marriage feasts, any functions /ceremonies or as we Odias call it "Bhoji".❤️

It's preparation is quite unique where fish head is cooked with Channa Dal with some specific vegetables.Here I've even added some Moong Dal to make it more protein rich and flavourful.😋

We Odias love our fish so much so that one can find lots of such unique fish recipes that goes very well with one pot hot steamed plain rice. 🍚😀
My detailed recipe given below:
Ingredients:
-Bengal gram/ chana dal : 1 cup
-Moong dal-1/2 cup
- Fish head : 1 (big size)
-Onion : 2 medium (finely chopped)
-Ginger and garlic paste : 2 tbsp.
-Tomato : 1 small (roughly chopped)
-Potato-1 medium size(cut into cubes)
-Pumpkin-medium size(cut into cubes)
-Green Beans-Handful(roughly 11-12)
-Carrot-1 medium size(cut into small cubes)
-Turmeric powder : 1 ½ tsp
-Chilli powder : 1 tsp
-Coriander powder : 1 tsp
-Cumin powder : 1 tsp
-Garam Masala powder-1 tsp
-Dry red chilli : 2
-Whole garam masala : 2 Bay leaves , 2sticks of cinnamon , 3green cardamom , 4cloves
-Salt to taste
-Mustard oil : 7 to 8 tbsp.
METHOD:
- Wash the chana dal and moong dal thoroughly. Soak it in water for 3 to 4 hours.
- After four hours boil the both the dals and the vegetables mentioned above (potato , pumpkin, beans, carrot ) with ½ tsp of turmeric powder and salt in a pressure cooker for 2 whistles in high flame.Then simmer the flame and allow it to boil for 5 more minutes. Keep aside till steam escapes.
- Wash the fish head and marinate it with a pinch of turmeric powder and salt.
- Heat 3 tbsp of mustard oil in a pan and fry the head.
- After well fried till golden colour crush the head with the help of a spatula and keep them aside. If you want you can fry other pieces also to add into the curry but do check the fish bones very carefully before adding.
- Heat 4 tbsp of oil in a different pan and add whole garam masalas into the hot oil .Then add chopped onion and fry the onions till it becomes translucent.
- Then add ginger garlic paste along with turmeric powder and chilli powder in it. Fry till oil comes out from the mixture.
- Add chopped tomatoes in it along with cumin powder and coriander powder and fry till tomatoes become soft and tender and the entire masala mixture gives out a nice aroma leaving the oil from the sides and top.
- Add crushed fish head to the masala mixture and fry for five to six minutes. If the masala sticks to the bottom add little bit of water in it.
- Then add boiled dals and vegetables into it.
- Mix all the ingredients and finally add 1 tsp of garam masala powder to the curry. Let it cook for another five minutes by covering the lid in medium flame so that the smell of the spices incorporates perfectly into the curry.
- After five minutes switch of the flame and add freshly chopped coriander.
- Serve hot with rice.
