The Food Diary - Dhaba Style Dal Fry.

A good Dal Tadka oozing out the aroma of asafoetida always fills the house with a very warm vibe that stirs up the mood making it more inviting.๐Ÿ˜

And yes at home mom always prepares the best dal tadka.Me and my lil' sis love to have it with veg pulao or simply with ghee rice.
So,today I exactly followed my mom's footsteps by trying out her amazing recipe in my kitchen.

Ingredients:-
 

Measurement for the boiling dal:
Soak Half cup toor dal for 2-3 hrs (Pigeon pea) Soak 2 Tbsp moong dal for 1/2 - 1 hr(Petite yellow lentils) Soak 2 Tbsp masoor dal 1/2-1 hr (Red lentils) 1 Tsp finely chopped ginger 1 or 2 green chillies 1 tsp salt 1/4 t sp turmeric powder 3 cup water 2 tsp desi ghee(clarified butter) Measurement for making the dal: 1 tbsp oil 1 tbsp ghee 1 medium sized onion finely chopped 1/2 inch finely chopped ginger 1 tea spoon finely chopped garlic 1 medium tomato
1 tsp Cumin seeds (jeera) 1/2 tsp Kashmiri red chilly powder 1/2 tsp garam masala
1/4 tsp turmeric powder. (haldi)
salt for taste. 1/4 cup water 2 tbsp finely chopped coriander leaves (Dhaniya) For the tadka : 2 tbsp ghee
1/2 tsp oil
3-4 whole dry Kashmiri red chilly 1 tsp finely chopped garlic 1 pinch asafoetida (hing) 1/4 t sp Kashmiri red chilly powder

Process:

Heat 2 tsp desi ghee in a pressure cooker.Add all the measured and soaked lentils( dal) to it.Stir fry for few minutes.Then add all other ingredients written above in the boiling dal section. Boil the dal and other ingredients together until 3 whistles on low medium flame.

Then for the initial tadka heat oil and ghee in a kadhai. Add jeera to it.When it starts to crackle add finely chopped onions t and fry them till golden brown. Then add finely chopped ginger and garlic and stir fry until the raw smell completely goes away. After that add diced tomato.Let the tomatoes get cooked nicely. Add rest all masalas as mentioned above along with half cup of water.Let it cook till the oil starts leaving from the sides of the cooked masala. Once cooked add the boiled lentils and bring it to boil. To get the good consistency you can add some water to it. Once it is boiled properly along with the masala, add finely chopped coriander leaves to it.

Then switch off the gas and serve the dal in a serving bowl. Finally prepare the last tadka and top it on the served dal just before eating. Enjoy with rice/roti.
