The food diary- Enduri Pitha/Haldipatra Pitha

ENDURI PITHA/HALDIPATRA PITHA😊
Ohhh!! my my the smell of #haldipatra(haldi ke patte/turmeric leaves) used early in the morning to make this amazingly delicious "pitha" not only makes the entire house aromatic but also it is extraordinarily evocative to all the five senses.
.
HAPPY HAPPY PRATHAMASHTAMI to all my lovely friends out there, especially the "first borns".
.
This is the most awaited Odia festival celebrated in every Odia household honoring the eldest child of the family. The celebration falls after the eighth day of Kartik Purnima in the month of Margasira according to Odia calendar.
.
A special "pitha" as per the tradition is prepared on this day popularly known as #enduripitha or #haldipatrapitha.
It's a very healthy recipe where steamed rice cakes are prepared wrapping them in turmeric leaves which are stuffed mostly with grated coconut and jaggery.
After offering them to God or the normal traditional puja is over these fluffy, yummy, coconutty "pithas" are enjoyed blissfully.❤️😍
.
P.S: My personal fav is #enduripitha stuffed with spicy gobi(cauliflower) fillings.

Ingredients Required:

1. Turmeric Leaves

2. 1  cup black gram (skinless is preferred)

3. 1 cup rice (pitha rice/idli rice)

4. 1 cup grated Coconut

5. Jaggery 200 gms.

6. Nutmeg powder 1/4 tsp

7. Cardamom powder 1/4 tsp

8. Pinch of salt for taste.

Process:

- Soak the rice and black gram for 4/5 hrs or overnight.

- Then grind into fine paste and keep it for fermentation for about 7/8 hrs.

- Add required amount of salt to the fermented batter.

- Stir fry the grated coconut, jaggery, nutmeg powder, cardamom powder until it becomes dry to make a perfect filling.

- Then pour the thick batter right into the middle of the thoroughly washed turmeric leaves and slightly flatten it. Required amount of filling is filled and the leaves are folded lengthwise, such that the fillings get sandwiched between batter and turmeric leaves.

- Then put the same in a steamer  and allow it to be steamed for 15-20mins.

- Check before taking out the pithas from the steamer with a toothpick whether its properly steamed or not.

- Once done the pithas are ready to be served.
