The Food Diary - Badam Milk/ Badam Doodh

 



This is an age old traditional Indian beverage which is purely healthy, protein packed, delicious and flavourful with the goodness of almonds,cardamoms & saffron.
The recipe carries good amount of Ayurvedic secrets with it,like-
It acts as an immunity booster, improves eyesight, strengthens bones, improves bowl movement etc etc.
.
Can be served hot directly after the preparation or served chilled after refrigerating for 2-3 hrs.
My personal preference is always a glass of chilled Badam Milk.❤️❤️

Ingredients:-

-1 litre full fat milk

-10-15 strands Saffron(soaked in 2-3 tbsp milk)

-15-20 almonds

-1/2 tsp cardamom powder

-1 tbsp honey for sweetness. Sugar can also be preferred in place of honey.

Preparation:-

1. Rinse and soak 15-20 almonds in hot water for 10-15 mins or in normal water for over 6 hours.

2. When soaked properly, the skin gets peeled off easily. After peeling add them to a blender along with 1/4 cup of milk.

3. Grind them to a smooth paste.

4. In a heavy bottom pan heat milk and once the milk comes to a boil, add the almond paste and saffron strands soaked in 2-3 tbsp of milk.

5. Simmer the heat and keep stirring for 10-15 mins so that the milk doesn't get burnt from the bottom.

6.Then add honey and cardamom powder for giving it a flavour and cook for few more mins.

7.Serve hot or chilled topped with pistachio slivers .
